Roasted Garlic Mashed Broccoli

Step 1: Roast the garlic

Slice off the top of the garlic head (leave the skin on). Drizzle with olive oil, wrap in foil, and roast at 200°C (400°F) for 20 minutes until soft and buttery.

Step 2: Cook the broccoli

Cut broccoli into florets. Steam or boil until fork-tender (about 5-7 minutes). Drain and squeeze out as much excess water as possible.

Step 3: Extract the garlic

Squeeze the roasted garlic head to push out the sweet, soft cloves.

Step 4: Mash and mix

Add the broccoli, roasted garlic, butter, salt, and pepper into a food processor (or mash vigorously with a potato masher) until smooth and creamy.
